Yum!! Thanks, Nicole, for another fun, inspiring cooking class. The place was gorgeous, and I really enjoyed the recipes. The leftovers were a huge hit with my husband (he loved the pork dish!) and 14 yr old son!!

Loved the class!! My friends and I can not stop talking about how inspired we feel after taking your class today! So many ideas, so many meals and most of them were under 15 minutes ... from start to finish! Yippee! We see the light!! I have already cooked a quick meal and everybody thought I slaved all day cooking! Mums the word!! :-) Great class! You really have a great understanding for "real life" time pressures! Yes! Finally a class worth every penny!

Nicole – Just wanted to let you know that yesterday's class was really great. Not only was the food really tasty, but it was unbelievable that such great meals could be so simple to make. You've inspired me to get into the kitchen and make "real" meals versus the "artificial" microwave meals that my husband and I normally eat. The time-saving tips were also extremely helpful. I can't begin to tell you how much I enjoyed the class on Thursday. Tara and I can't stop talking about it. I made the ham tortellini recipe and was a hit (4 out of 4 loved it). We also started a snack draw. Thanks again for a great experience.

Hi Nicole,

Just wanted to let you know that my dinner party was a great success! Everyone loved the rack of lamb, asparagus, & cous cous, but the banana dessert really got the most complements. And it was all so easy to prepare.

My 17 year old son rushes in the house after baseball practice with half an hour before he goes to work. I don't always know until the last minute if he plans to eat home or out. It's great to be able to throw something together while he's in the shower and be able to sit down with him for 15 minutes and eat.

I loved the 15 Minute Dinner class it was so much fun and everyone was so nice! I went shopping after and filled my freezer and pantry with all new things and the other night came home and when my husband and kids said whats for dinner I put 2 reciepes together and had dinner in probally 20 minutes! It was great! I cant wait till September when the new classes come out!

P.S. You motivated me so much that I went shopping right after the class, bought a flank steak, marinated it with a paste of fresh herbs, garlic, oil, salt & pepper and cooked it on the grill. It was fabulous! I used the frozen garlic from Trader Joe's. It was perfect. I loved it.

I have a couple questions for you:

How much would you charge to do a cooking party for my soon-to-be 10 year old daughter, for her birthday???? Where would you do it?

And, in your remaining late spring classes, which ones are not filled up yet?? I will definitely be there on June 2 (to introduce another friend to you!), but may want to come back again!!

It's worth the cost of a class alone, for the fact that my 2 and a half year old son has added whole wheat cous-cous to his not so vast repertoire of food. I want to say the classes that I have taken thus far have been absolutely wonderful! I was skeptical at first, 15 Minute Meals, ya right!! But I couldn't believe how quick, easy and nutritious everything was AND in 15 REAL minutes! And not to mention delicious. I've taken two classes so far; Soups & Casseroles and 15 Minute Meals II. My 15 month old twins and my husband have loved everything so far. I like how I can take one of your recipes and create other recipes from it just by adding different veggies or meats. It's genius!! Can't wait for the next class.

Hi Nicole!

My name is Sara Brown and I took your class at Jennifer Dennison's home a few weeks ago. I tried all the recipes from Menu 1 that you taught us and I was amazed at not only how easy making the meal was, but how quick the clean up was. I used kitchen tools with one syllable names – spoon, pan, knife – and made a tasty meal! It was a relief to know that the Cuisinart and measuring cups would stay in my cupboards.

I'd like to organize a cooking class for Menu 2 but am not sure how to go about it? What evenings do you have open in January? I already have 4-5 friends interested in taking the class.

Dear Nicole,

I was so happy to attend your "15 Minute" Dinner class with my 3 friends. We all had so much fun. We were a little skeptical about being able to learn how to do 6 meals in 1 hour and 30 minutes, but you made us firm believers that it can be done!

I have tried all the menus, and you are correct, my kids love them! They think it is so neat to be able to assemble and make a dinner so fast. Next week they are going to try cooking themselves! This is an absolute first!

I loved learning how to cook a shrimp and a scallop correctly. I love the garlic paste. I love that I can freeze my shredded cheese and have it be fine. I love that I can shop ahead and not have to shop every day. I love that all these things can be found at Trader Joes. I love everything about the class. It was the best 90 minutes I have ever spent.

We are talking about scheduling the dinner party menu next. Laurie Tuck says she will take it again, she liked it so much. It is a great birthday party for girlfriends.
